With cold smoking, meat hangs in an unheated space, so the smoke does not come from the fire on which the meat is roasted. The temperature during cold smoking can vary between 0°C – 25°C. We are fans of cold smoking! Cold smoking is easier and faster than hot smoking and it gives a delicious sweet and delicate taste.
Hot smoking
Hot and cold smoking are not the same, and there is a big difference. The name may already give it away: with hot smoking, meat is held directly over the fire (or near the fire) of the burning wood, which ensures that the meat cooks during smoking. Think of a BBQ, for example! The charcoal releases hot air, which heats the meat slowly and gradually in a (often closed) space.

How do you know which wood flavor is good for which dish?
Of course, that depends entirely on the flavor you want to go for and what you are going to combine the dish with. But usually heavier types of wood suit meat better. Then think of oak or beech, for example. Apple is a good choice if you plan to smoke salmon.
