Green asparagus is an incredibly versatile vegetable and also very healthy. Even the Greeks and Romans considered this green vegetable a miracle cure for ailments. This recipe provides basic instructions for cooking green asparagus sous vide. The advantage of sous vide cooking is that all the vitamins and minerals in the asparagus are preserved.

Ingredients

  • 2 bunches of green asparagus
  • half a lemon
  • 2 cloves of garlic
  • half a red pepper
  • black pepper
  • sea ​​salt
  • olive oil

Preparation

The preparation

Wash the asparagus and pat them dry with paper towels. You can trim the ends of the green asparagus if you like, but these days this is often no longer necessary. Set the sous vide appliance to 84°C (185°F) and let it come to temperature.

The taste

Season the asparagus with your preferred herbs. This basic recipe is simple: pepper, olive oil, garlic, and sea salt. Vacuum seal the asparagus using a vacuum sealer. Make sure the asparagus is in a single layer. Use multiple bags if necessary to prevent the asparagus from overlapping.

Time

Set the sous vide appliance to 20 minutes and let it cook. We use the sous vide rack for this; it's super handy for keeping the food submerged. After 20 minutes, remove the green asparagus from the water and cut open the vacuum bag.

Lemon

Delicious with asparagus, a little lemon juice and zest. We then dress the asparagus with a little salty soy sauce and thinly sliced ​​red pepper. Super easy, but oh so delicious!
