Green asparagus is an extremely versatile vegetable and also very healthy. The Greeks and Romans already saw this green vegetable as a miracle cure for ailments. In this recipe you will find basic instructions for cooking green asparagus sous vide. The advantage of cooking sous vide is that all the vitamins and minerals of the asparagus are preserved.

Ingredients:

  • 2 bunches of green asparagus
  • half a lemon
  • 2 cloves of garlic
  • half red pepper
  • black pepper
  • sea ​​salt
  • olive oil

Preparation:

  1. Preparation: Wash the asparagus and pat it dry with kitchen paper. You can cut off the back of the green asparagus at your own discretion , but nowadays this is often no longer necessary. Set the sous vide device to 84 degrees and let it come to temperature.
  2. The taste: Give the asparagus taste with the herbs you want to use. In this basic recipe we keep it simple; pepper, olive oil, garlic and sea salt. Vacuum the asparagus with the vacuum sealer . Make sure that the layer of asparagus is one layer. If necessary, use multiple bags so that the asparagus do not overlap.
  3. Time: Set the sous vide device to 20 minutes and let it cook. We use the sous vide rack for this , super handy to keep the products under water. After 20 minutes, remove the green asparagus from the water and cut open the vacuum bag .
  4. Lemon: Delicious with asparagus, a little lemon juice and zest. We then dress the asparagus with a little salty soy sauce and thinly sliced ​​red pepper. Super easy, but oh so tasty!
