Ingredients
- 375 ml whole milk
- 250 ml (whipped) cream
- 1 vanilla pod
- 115 g dark chocolate
- 20 g sugar (optional)
- Dash of rum (optional)
- Cocoa powder
Preparation
The preparation
Turn on your sous vide machine to 85 degrees Celsius (185 degrees Fahrenheit) and let it warm up. Fill the sous vide bag with the whole milk, (whipped) cream, sugar (optional), vanilla bean, dark chocolate, and rum (optional).
Sealing
Seal the bag ; you don't need to vacuum seal it. Make sure the bag is tightly sealed; if necessary, seal both edges. Leave the bag in the water bath for 50 minutes. The chocolate should now be completely melted.
Out of the water bath
If the chocolate hasn't melted yet, leave the bag in the bain-marie for a moment. Then remove the bag from the water, carefully cut it open, and pour it into a jug.
Serve
Stir the mixture with a spatula until all ingredients are well combined. Serve the hot chocolate immediately in a mug. Serving tip: sous vide chocolate milk naturally requires whipped cream, so top it off with some whipped cream and cocoa powder for an even more delicious result.
