Cauliflower rice with fresh herbs

  • 1 large cauliflower
  • 2 tablespoons of olive oil
  • Fresh herbs (e.g. parsley, coriander, mint)
  • Salt and pepper to taste
  • Optional: lemon


  1. Preparation -

    Clean the cauliflower and cut into florets. Place the florets in a food processor or high speed blender and pulse until they have the texture of rice.

  2. Yarn -

    Heat olive oil in a pan and add the cauliflower rice. Cook for 5 to 7 minutes or until the cauliflower is tender.

  3. Flavor -

    Chop the herbs finely and add to the pan. Mix well and season with salt and pepper.

  4. Optional -

    Optionally add the lemon for a little acidity.
