- 750 ml rum
- 4 sprigs of lemongrass
- 15 mint leaves
- 3 limes
- 50 ml sugar syrup (or sugar)

Heat the water to 57 degrees Celsius. Lightly bruise the lemongrass. Zest 2 limes and add the zest to the vacuum bag with the moisture strip. Halve the same limes and squeeze out the juice. Reserve the liquid in the vacuum bag and add 10 mint leaves, the rum, and lemongrass to the bag. Measure 50 ml of sugar syrup and add it to the bag. Use the remaining mint and lime for garnish.
Yarn
Place the bag in water at 54 degrees Celsius for 4 hours. Remove the bag from the water and refrigerate until it is cold.
Serve
Serve the rum topped off with soda water. You can adjust the strength of the cocktail to your liking. Serve with the remaining mint, lime, and ice.
