Zucchini Pancakes

  • 2 zucchini
  • 2 stalks of spring onion
  • 1 egg
  • 75 grams of grated cheese
  • 65 grams of flour
  • 1/2 tsp baking powder
  • pinch of black pepper
  • pinch of salt
  • lemon juice
  • olive oil
  • salty
  • 1 clove of garlic
  • 150 ml creme fraiche


  1. Grating -

    Wash the zucchini and then grate them. Sprinkle with plenty of salt to release the moisture. After 5 minutes you can wring it out.

  2. To cut -

    Finely chop the spring onion and add it to the grated courgettes together with the flour, grated cheese, baking powder and egg. Season with black pepper and salt.

  3. Blending -

    Add all the ingredients for the sauce to the blender and blend everything together for 30 seconds.

  4. Baking -

    Heat some olive oil in the pan and pour small amounts of batter into the pan with a spoon. Fry until golden brown on both sides.

  5. To serve -

    Serve a number of zucchini fritters next to or on top of each other and add some of the homemade sauce. Enjoy your meal!
