ananas sous vide

  • 1 pineapple
  • 100 grams of sugar
  • 100 ml of water
  • 1 cinnamon stick
  • 4 dl yoghurt
  • 100 g icing sugar


  1. Get everything ready -

    Take a sous vide container or pan and fill it with warm water. Set the sous vide device to 84 °C and let the water heat.

  2. Clean the pineapple -

    Cut off the peel of the pineapple with a knife. Remove the core. Cut equal pieces from the pineapple.

  3. Sugar water -

    In the meantime, make sugar water from the sugar and water. Bring the water to the boil and then add the sugar. When the sugar has dissolved, add the spices. Think of: cinnamon sticks, vanilla pod and/or juniper berries.

  4. Pack the pineapple -

    Place the pineapple in the sous vide bags together with all the ingredients. Place the sous vide bag in the water bath and set the timer for 60 minutes.

  5. Yogurt vanilla cream -

    Mix the yogurt with the marrow of a vanilla pod. Then sweeten it by adding powdered sugar.

  6. Finish -

    Serve the pineapple immediately or let it cool in ice water. Grill the pineapple in a grill pan after cooking. Serve with the pineapple a vanilla yoghurt cream.

Ik zou graag willen weten wat er allemaal onder de ham ligt, maar ook hoe dat dan te bereiden. Dus het totaal plaatje.
