ananas sous vide

First prepare a pineapple sous vide. And then grill it in the grill pan, delicious. Pineapple is the perfect fruit for grilling. That fresh-sour taste of the pineapple goes well with the full and creamy yoghurt. Try it and let me know what ingredients you put in the marinade. Maybe a liqueur?

For a fuller structure of the yoghurt, the yoghurt should be hung in a cloth for 24 hours. You then make a hang-up of yoghurt.

Ingredients:

  • 1 pineapple
  • 100 g sugar
  • 100 ml water
  • 1 cinnamon stick
  • 4 dl yoghurt
  • 100 g icing sugar

Preparation:

  1. Get everything ready: Take a sous vide container or pan and fill it with warm water. Set the sous vide device to 84 °C and let the water heat up.
  2. Clean the pineapple: Cut the skin of the pineapple with a knife. Remove the core. Cut equal pieces from the pineapple.
  3. Sugar water: In the meantime, make sugar water from the sugar and water. Bring the water to a boil and then add the sugar. When the sugar has dissolved, add the spices. Think of: cinnamon sticks, vanilla pod and/or juniper berries.
  4. Pack the pineapple: Place the pineapple together with all the ingredients in the sous vide bags. Place the sous vide bag in the water bath and set the timer for 60 minutes.
  5. Yogurt vanilla cream: Mix the yoghurt with the marrow of a vanilla pod. Then sweeten it by adding powdered sugar.
  6. Finishing: Serve the pineapple immediately or let it cool in ice water. Grill the pineapple after cooking in a grill pan. Serve with a cream of vanilla yoghurt with the pineapple.

Ik zou graag willen weten wat er allemaal onder de ham ligt, maar ook hoe dat dan te bereiden. Dus het totaal plaatje.
