Ingredients
- 400 g strawberries
- 200 g gelling sugar
- 2 limes
- 1 vanilla pod

Grab your sous vide container! Preheat the sous vide cooker to 90 degrees Celsius. Make sure the container is deep enough and well-filled with water. Some of the water will evaporate unless you use the thermal insulation balls .
Just cut
Thinly slice the strawberries and zest the limes. Fill the sous vide bag with all your ingredients: the lime zest, lime juice, jam sugar, and vanilla sugar, and vacuum seal .
Yarn
Place the bag with all the ingredients in the container with water when it is at the right temperature and set the timer for 2 hours.
Almost ready
When the time is up, carefully remove the bag from the water bath and let it cool on the counter. You can leave the strawberry chunks in for a coarser texture. If you prefer a smoother jam, gently roll it over with a rolling pin. Do this carefully.
Packaging
Remove the jam from the bag and pour it into a jam jar or mason jars. It's best to cut open a small corner of the bag so all the jam slides in smoothly and you don't spill.
