Zuppa Toscana: a savory soup from Tuscany

  • 500 grams of sausage meat
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 4 large potatoes, sliced
  • 1 bunch kale, finely chopped
  • 1 liter of chicken stock
  • 200 milliliters of cream
  • Olive oil
  • Salt and pepper


  1. Step 1 -

    Fry the sausage meat in a little olive oil in a large pan.

  2. Step 2 -

    Add the onion and garlic and fry until soft.

  3. Step 3 -

    Add the potatoes and chicken stock and bring to the boil. Let simmer until the potatoes are done.

  4. Step 4 -

    Stir in the kale and cream and cook for a few more minutes. Season with salt and pepper.
