Sous-vide-witlof

Sous vide chicory is incredibly easy to prepare. Just clean, season, and put it in the sous vide!

Ingredients

  • 500 g chicory
  • 200 ml orange juice
  • ginger stalk
  • pepper
  • salty

Preparation

Preparation

Preheat the sous vide appliance to 85 degrees Celsius. Chop the ginger. Remove the outer leaves of the chicory and wash the vegetable thoroughly. Then cut the chicory in half. Place it in the sous vide bag along with the ginger, salt, pepper, and orange juice.

Yarn

Cook for 45 minutes at 85°C (185°F). Remove from the sous vide bag, reserve the liquid in a saucepan, and reduce to a syrupy consistency. Grill the endive for 1 minute on a hot griddle. Serve the endive with the orange sauce.
