Ingredients:

  • 500 g chicory
  • 200 ml orange juice
  • stem of ginger
  • pepper
  • salty

Preparation:

  1. Preparation -

    Preheat the sous vide device to 85 degrees. Cut the ginger into pieces. Remove the outer leaves of the chicory and wash the vegetable well. Then cut in half. Place in the sous vide bag along with the ginger, salt, pepper and orange juice.

  2. Yarn -

    Cook for 45 minutes at 85 degrees. Remove from the sous vide bag, collect the liquid in a pan and cook it into a syrupy liquid. Grill the chicory for 1 minute on a hot grill plate. Serve the chicory with the orange sauce.
