Ingredients:

  • 300 grams Arborio rice
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 100 milliliters white wine
  • 1 liter warm chicken or vegetable stock
  • 50 grams of butter
  • 100 grams of grated Parmesan cheese
  • Olive oil
  • Salt and pepper
  • Possibly fried mushrooms

Preparation:

  1. Step 1: Heat olive oil in a pan and fry the onion and garlic until soft. Add the rice and fry for a few minutes until the grains are translucent.
  2. Step 2: Add the white wine and let it evaporate almost completely. Then add a ladle of warm stock and stir until it is absorbed. Repeat this process until the rice is cooked (about 18 to 20 minutes).
  3. Step 3: Stir in the butter and Parmesan cheese and optionally the mushrooms and season with salt and pepper.
