Quinoa salad with fresh herbs

  • 200 grams of quinoa
  • Fresh herbs (parsley, coriander, mint)
  • 1 lemon
  • 3 tablespoons extra virgin olive oil
  • 1 clove garlic
  • Salt and pepper to taste
  • Optional: roasted eggplant
  • Optional: handful of feta


  1. Quinoa -

    Cook the quinoa according to the instructions on the package and let cool.

  2. Spices -

    Finely chop the fresh herbs and cut the garlic into small pieces.

  3. To blend -

    Mix the quinoa with the herbs, lemon juice, olive oil, salt and pepper.

  4. Optional -

    Optionally add the roasted eggplant and feta.
