Ingredients:
- 200 grams quinoa
- Fresh herbs (parsley, coriander, mint)
- 1 lemon
- 3 tablespoons extra virgin olive oil
- 1 clove garlic
- Salt and pepper to taste
- Optional: roasted eggplant
- Optional: handful of feta
Preparation:
- Quinoa: Cook the quinoa according to the instructions on the package and let it cool.
- Herbs: Finely chop the fresh herbs and cut the garlic into small pieces.
- Mix: Mix the quinoa with the herbs, lemon juice, olive oil, salt and pepper.
