Ingredients

  • 200 grams of quinoa
  • Fresh herbs (parsley, coriander, mint)
  • 1 lemon
  • 3 tablespoons extra virgin olive oil
  • 1 clove of garlic
  • Salt and pepper to taste
  • Optional: roasted eggplant
  • Optional: handful of feta

Preparation

Cook the quinoa according to the package directions and let it cool. Finely chop the fresh herbs and finely chop the garlic. Mix the quinoa with the herbs, lemon juice, olive oil, salt, and pepper.

Optional: Optionally add the roasted eggplant and feta.
