In this recipe, we're making sous vide pickled onions! If you have a sealed container, you don't even need vacuum bags.

Ingredients
- 2 red onions
- 2 tbsp sugar
- 1 tbsp salt
- 200 ml water
- 200 ml white wine vinegar
- pepper

Set the sous vide appliance to 82 degrees Celsius (180 degrees Fahrenheit). Cover and thinly slice the red onions. If you have a preserving jar, you can put the onions in it; if not, place them in a vacuum-sealed bag.
Ingredients
Add the white wine vinegar, water, a pinch of pepper, sugar, and a tablespoon of salt. Seal the bag or jar. Place in the bath for 45 minutes. Remove the jar or bag and stir. You can use the onions in a wide variety of dishes.
