Ingredients:

  • Smoked salmon
  • 1 g smoke dust

Preparation:

  1. Smoking the salmon: Get the smoking gun, smoke dome and some wood chips of your choice. Don't have any smoking equipment yet? You can also buy the entire package at a discount. Place the smoked salmon under the smoke dome. Fill the smoking gun with wood chips and connect the hose to the smoke dome. Turn on the device and then light the smoke chips. Then fill the dome completely with smoke and turn off the device.
  2. Salmon appetizers: Let the smoke soak in for about 5-10 minutes, depending on the strength you want the salmon to have. Then remove the smoke dome and cut the salmon into thin strips. Since the salmon now has a very strong flavor, we recommend using it in appetizers, for example. In this example, we serve the salmon on a small pancake with herb butter. Of course, you can also eat the salmon on bread, quiche, tartare, pasta or with a poached egg.

Hallo,
Ik zou graag een verse zalm koud roken. Hoe kan ik dit het beste doen?
Eerst roken en daarna garen in bijvoorbeeld de oven? En enig idee hoe lang de zalm gerookt moet worden en met hoeveel houtmot?
Misschien is het een goed idee om ook hiervan een recept op de website te plaatsen?

Hi Mirjam,

Je kunt de zalm eerst koud-roken en daarna bijvoorbeeld in de oven garen. Eén keer het rookpistool vullen en daarna laten staan tot alle rook niet meer zichtbaar is is voldoende!
