Mozzarella becomes even more flavorful with a smoky flavor. In this recipe, we smoke mozzarella di bufala (buffalo mozzarella) with a smoking gun (cold smoking) for an intense flavor.

Ingredients
- 125 g buffalo mozzarella
- tomatoes (mixed varieties)
- pesto
- arugula
- balsamic dressing
Preparation
Smoke the mozzarella
Connect the smoking gun to the dome. Then fill the gun with wood chips of your choice. In this recipe, we're using lemon wood chips. Drain the mozzarella, pat it dry, and place it under the dome. Let the smoke fill the dome for about 30 seconds, then turn off the smoking gun. Let the smoke infuse for about 5 minutes.
Serve
Serve the mozzarella with pesto, tomatoes, arugula and balsamic dressing.
Optional: toast some garlic bread in the oven to serve with it.
