Mozzarella becomes even more flavorful with a smoky flavor. In this recipe we smoke mozzarella di bufala (buffalo mozzarella) with the smoking gun (cold smoking) for an intense flavor.

Ingredients:
- 125 g buffalo mozzarella
- tomatoes (mixed varieties)
- Pesto
- arugula
- balsamic dressing
Preparation:
- Smoke the mozzarella: Connect the smoking gun to the smoke dome. Then fill the smoking gun with wood chips of your choice. In this recipe we use the lemon wood chips. Drain the mozzarella, pat it dry and place under the smoke dome. Let the dome fill with smoke for about 30 seconds and turn off the smoking gun. Let the smoke soak in for about 5 minutes.

Serving: Serve the mozzarella with pesto, tomatoes, rocket and balsamic dressing.
Optional: toast some garlic bread in the oven to serve with it.
