Ingredients:
- 4 large potatoes
- 2 tablespoons olive oil
- Coarse salt and pepper to taste
- Optional: toppings such as butter, sour cream, grated cheese, chives, or other favorite herbs.
Preparation:
- Step 1: Preheat the grill to medium heat. If necessary, use the lava rocks on your barbecue.
- Step 2: Wash and scrub the potatoes clean. Then dry them well.
- Step 3: Prick each potato a few times with a fork. This will prevent them from bursting while grilling.
- Step 4: Rub each potato with olive oil and then sprinkle generously with coarse salt and pepper.
- Step 5: Place the potatoes directly on the grill rack and close the lid of the grill. Let them grill for about 45-60 minutes, turning every 15 minutes, until the insides are tender and the skins are crispy.
