Wash and peel the beets. Then cut them into even slices and arrange them on the rack in the dehydrator.

Drying

Preheat the dehydrator to 48°C (118°F). Once the dehydrator is preheated, place the rack in the oven. After 8 hours, check to see if the beets are completely dried.

The beets may need a little more time to dry completely. If so, place the rack back in the oven and wait until they are completely dry. Once the beets are completely dry, remove the rack from the oven and let them cool. Then store the beets in a sealed container.
