Caesar salad

Caesarsalade

One of the easiest salads to make, the Caesar salad! With just a few ingredients, you can create a complete meal. We prepare the chicken sous vide for a super tender result.

Ingredients

  • 2 chicken fillets
  • 1 head of romaine lettuce
  • 3 slices of white bread
  • 70 g Parmesan cheese
  • 1 red onion
  • pepper
  • salty
  • half a lemon
  • 1 tbsp mayonnaise
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 2 eggs
  • 2 cloves of garlic
  • anchovies (optional)
  • tomato (optional)

Preparation

Chicken yarn

Set the sous vide appliance to 65°C (149°F). Vacuum-seal the chicken (with some salt and pepper) and cook for 1.5 hours. Remove the bag from the water and pat dry. For a grilled flavor, you can briefly place it in a hot pan or grill it with a blowtorch.

Caesar dressing

Mix the mayonnaise, the juice of half a lemon, 20 grams of Parmesan cheese, Worcestershire sauce, Dijon mustard, 1 egg yolk, and 1 egg. Season with salt and pepper to taste. Crush two cloves of garlic and add them to the Caesar dressing.

Salad

Cut the crusts off the bread slices. Then cut into cubes. Grill in a pan with olive oil, salt, and pepper until crispy. Be careful not to overheat, otherwise the croutons will burn. Chop the lettuce and garnish the salad with the remaining cheese, dressing, and chicken.

Optional: for a bit more body, you can add a boiled egg, tomatoes and anchovies.
