Always wanted to make your own applesauce? Sous vide makes it incredibly easy! With standard cooking methods, the applesauce can sometimes turn a bad color, but sous vide prevents that! Plus, all the flavors are preserved.

Ingredients
- 4 apples
- 40 grams of caster sugar
- 20 ml water
- 1 star anise
- 1 cinnamon stick

Peel the 4 apples and remove the cores. Then thinly slice the apples and add 40 grams of sugar, 1 star anise, 1 cinnamon stick, and a little water. Then vacuum-seal the bag.
Yarn
Preheat the water bath to 80 degrees Celsius (176 degrees Fahrenheit) and cook for 30 to 35 minutes. Remove the vacuum-sealed bag from the water, cut it open, and place the apples in a small bowl. Remove the cinnamon stick and star anise and blend the apples into a puree with an immersion blender. You can optionally add some ground cinnamon for a nice effect.
If you're not going to eat the applesauce right away, let it cool before refrigerating.
