Preparation method

  • Soak the chickpeas
  • Place the dried chickpeas in a large bowl and cover with plenty of water. Let them soak for at least 12 hours (preferably overnight).

Make the falafel mixture

  • Place the chickpeas in a food processor or blender. Add the onion, garlic, parsley or cilantro, cumin, ground coriander, salt, pepper, and any additional spices you like.

  • Add the baking powder and flour and mix briefly until well combined.
  • Place the mixture in the refrigerator for at least 30 minutes to firm up.

Baking or frying
