Crispy oatmeal cookies

Oatmeal cookies have been a household favourite for generations. This crispy version brings out the best of oats, with a golden brown exterior and a delicious bite. Perfect with a cup of tea, as a treat for the kids, or just whenever you fancy a treat. Once you try them, you’ll want to make them again and again.

Ingredients:

  • 100 grams of butter, at room temperature
  • 100 grams of sugar
  • 100 grams brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 125 grams of flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 225 grams of oatmeal
  • 100 grams raisins or chopped nuts (optional)

Preparation:

  1. Step 1: Preheat the oven to 180°C and line a baking tray with baking paper.
  2. Step 2: In a large bowl, beat the butter, sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract and mix well.
  3. Step 3: In a separate bowl, mix together the flour, baking powder, salt and cinnamon if desired. Gradually add this mixture to the butter mixture and mix well.
  4. Step 4: Fold the oatmeal and, if desired, raisins or nuts into the dough.
  5. Step 5: Use a spoon to scoop small mounds of dough onto the baking sheet, leaving plenty of space between the cookies.
  6. Step 6: Bake in the preheated oven for about 10 to 12 minutes, or until the edges are golden brown.
  7. Step 7: Remove from oven and let cool briefly on the baking sheet before transferring to a wire rack to cool completely.

    Enjoy your crispy oatmeal cookies with a hot beverage of your choice, or simply as a snack. Store any leftover cookies in an airtight container to preserve their crispness.
