Crispy oatmeal cookies

  • 100 grams of butter, at room temperature
  • 100 grams of sugar
  • 100 grams of brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 125 grams of flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 225 grams of oatmeal
  • 100 grams raisins or chopped nuts (optional)


  1. Step 1 -

    Preheat the oven to 180°C and line a baking tray with baking paper.

  2. Step 2 -

    In a large bowl, beat the butter, sugar and brown sugar until creamy and light. Add the egg and vanilla extract and mix well.

  3. Step 3 -

    In a separate bowl, mix the flour, baking powder, salt and possibly cinnamon. Gradually add this mixture to the butter mixture and mix well.

  4. Step 4 -

    Fold the oatmeal and possibly raisins or nuts into the dough.

  5. Step 5 -

    Use a spoon to scoop small mounds of dough onto the baking sheet, leaving plenty of space between the cookies.

  6. Step 6 -

    Bake in the preheated oven for about 10 to 12 minutes, or until the edges are golden brown.

  7. Step 7 -

    Remove from the oven and let cool briefly on the baking sheet before transferring to a wire rack to cool completely.

    Enjoy your crispy oatmeal cookies with a hot drink of your choice, or simply as a snack. Store any leftover cookies in an airtight container to maintain their crispness.
