Oatmeal cookies have been a household favourite for generations. This crispy version brings out the best of oats, with a golden brown exterior and a delicious bite. Perfect with a cup of tea, as a treat for the kids, or just whenever you fancy a treat. Once you try them, you’ll want to make them again and again.

Ingredients:
- 100 grams of butter, at room temperature
- 100 grams of sugar
- 100 grams brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 125 grams of flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 225 grams of oatmeal
- 100 grams raisins or chopped nuts (optional)
Preparation:
- Step 1: Preheat the oven to 180°C and line a baking tray with baking paper.
- Step 2: In a large bowl, beat the butter, sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract and mix well.
- Step 3: In a separate bowl, mix together the flour, baking powder, salt and cinnamon if desired. Gradually add this mixture to the butter mixture and mix well.
- Step 4: Fold the oatmeal and, if desired, raisins or nuts into the dough.
- Step 5: Use a spoon to scoop small mounds of dough onto the baking sheet, leaving plenty of space between the cookies.
- Step 6: Bake in the preheated oven for about 10 to 12 minutes, or until the edges are golden brown.

Step 7: Remove from oven and let cool briefly on the baking sheet before transferring to a wire rack to cool completely.
