Ingredients
- 100 grams of butter, at room temperature
- 100 grams of sugar
- 100 grams of brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 125 grams of flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 225 grams of oatmeal
- 100 grams raisins or chopped nuts (optional)
Preparation
Step 1
Preheat the oven to 180°C and line a baking tray with baking paper.
Step 2
In a large bowl, cream the butter, sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract and mix well.
Step 3
In a separate bowl, combine the flour, baking powder, salt, and cinnamon (optional). Gradually add this mixture to the butter mixture and mix well.
Step 4
Fold the oatmeal and, if desired, raisins or nuts into the dough.
Step 5
Use a spoon to scoop small mounds of dough onto the baking sheet, leaving plenty of space between the cookies.
Step 6
Bake in the preheated oven for about 10 to 12 minutes, or until the edges are golden brown.
Step 7
Remove from oven and let cool briefly on the baking sheet before transferring to a wire rack to cool completely.
