Goedemorgen,
Ik wil procureur van wildzwijn op 57 graden (24 uur) garen en vervolgens nog even afbakken voor een krokant korstje.
Procureur recept idee #2: zoete en pittige glazuur lijkt mij heerlijk voor het korstje. Moet ik het vlees voordat ik het sous vide ga garen al marineren met de glazuur? Of alleen insmeren voor het “afbakken”?
