Cover and let it ferment

  • Let ferment for 7-10 days, depending on how sour you want the kombucha.

Taste and bottle

  • Taste after 7 days. If the flavor is good (slightly tart and refreshing), remove the SCOBY and store it with a little liquid for your next batch.
  • Pour the kombucha into bottles and seal tightly.

Second fermentation (optional)

  • Add flavorings (such as fruit, ginger, or herbs) to the bottles.
  • Let the bottles sit at room temperature for 2-5 days to develop carbonation.
  • Then place the kombucha in the refrigerator to stop the fermentation process.
