Chicory

Sous vide chicory is super easy to prepare. Just clean, season and put in the sous vide!

Ingredients

  • 500 gr chicory
  • 200 ml orange juice
  • stump ginger
  • pepper
  • salt

Preparation

  1. Preparation

    Heat the sous vide device to 85 degrees. Cut the ginger into pieces. Remove the outer leaves of the chicory and wash the vegetable well. Then cut in half. Place in the sous vide bag together with the ginger, pepper, salt and orange juice.

  2. Cooking

    Cook for 45 minutes at 85 degrees. Remove from the sous vide bag, collect the liquid in a pan and boil it to a syrupy liquid. Grill the chicory for 1 minute on a hot grill plate. Serve the chicory with the orange sauce.
