It can be difficult to get a leek to cook properly. The outside is often overcooked while the inside is still hard. Do you want to give leeks the perfect cooking? Try sous vide cooking.
- 1 leek
- olive oil
- soy sauce
Wash the leeks under cold water and cut off the top of the leaf. Then cut off the bottom as well. You can now remove the top layer of the leek. Heat the water bath to 85 degrees and place the leeks in a vacuum bag.
Add a dash of olive oil and some pepper and salt and vacuum-pack the bag. Place in the water bath and cook for 30 minutes at 85 degrees. After 30 minutes, take the leeks out of the bag and drain them.
Cut the leeks into 5-centimetre pieces and skewer them with wooden skewers. Then coat the leeks with soy sauce and grill the skewers for 1 minute per side. Bon appetit!
