Smoked old cheese
You probably already know the smoked cheese from the supermarket. But what if I tell you that you can get an even better result with the smoking gun? This recipe can be used with any kind of cheese, but keep in mind that with some strong cheeses it can be a bit overpowering. In this recipe we use old cheese.
- 200 gr old cheese
- 1 gr wood moth
Place the cheese in a small container and place this container in the sous vide container. Close the tray with foil. Add the wood chips to the Smoking Gun and turn it on for about 20 seconds.
Smoke the cheese
Make sure that the container is completely filled with smoke and try to let as little smoke escape as possible. Unlike hot smoking, cold smoking keeps the cheese at room temperature and therefore does not melt.
To your own taste
Let the cheese smoke for 3-5 minutes in the container and taste the cheese. If all goes well, the cheese should now have a decent smoke flavor, but of course you can always smoke it longer.
