Smoked caramel sea salt

Smoked caramel-sea salt with the smoking gun. In this recipe we take a basic recipe of caramel with sea salt and give it a special flavor with the smoking gun. You can then use the caramel in various desserts such as ice cream, brownies or cookies. 


  • 300 gr caster sugar (light brown)
  • 250 ml whipped cream
  • 220 gr butter (unsalted)
  • 1 vanilla pod (or vanilla extract)
  • sea salt
  • 1 gr wood moth


  1. Making caramel

    Melt the unsalted butter in a pan and then add the sugar. Make sure the sugar is completely incorporated and cook on medium heat. When the sugar is absorbed add the cream and stir until smooth. Stir for a few minutes and turn up the heat slightly so it starts to boil. Cut open the vanilla pod and remove the contents. Add this and the stick to the mixture and add sea salt to taste. Continue cooking until the mixture starts to thicken slightly. Keep in mind that the caramel will still rise slightly once it gets colder, so don't wait too long. Remove from the heat when it has the right thickness and place in a jar.

  2. Smoking

    Place the jar of caramel under a smoking bell and smoke with a smoking gun for 5 minutes. Serve the caramel on ice cream, cakes or cookies.
